Black Bean Burger

Black Bean Burger

serves 4

Ingredients

2 cans of black beans, drained and rinsed (or use any beans you like)

1 Tbsp light mayonnaise

1/3 cup of whole grain bread*, cut into cubes

1 tsp oregano

1 tsp cumin

¼ tsp cayenne pepper (optional)

¼ cup cilantro, chopped

Instructions

  1. Combine one can of beans, mayonnaise, bread, and spices in a food processor. Pulse until a smooth paste is formed.
  2. Mix in second can of beans and chopped cilantro.
  3. Form four patties.
  4. Heat just enough oil to cover a large skillet over medium high heat.
  5. Brown the patties on both sides, about 3 minutes on each side, turning once.
  6. Eat on a whole wheat hamburger bun, or wrapped in a whole grain tortilla with your favorite toppings.

*Note: look for bread with no high-fructose corn syrup
