Breakfast Muffins

These kid-friendly muffins, made with whole wheat flour and fruit, are packed with flavor. Muffins are a great choice for a pre-made, on the run, breakfast.


2 ripe bananas, peeled

½ cup almond butter, peanut butter, or coconut or canola oil

1½ cups whole wheat flour

½ teaspoon cinnamon

1 teaspoons baking powder

½ teaspoon baking soda

3 small or 2 medium apples, diced

baking spray


  1. Preheat oven to 350 degrees F.
  1. Combine first two ingredients in a bowl and mash with a fork until combined.
  1. Add the remaining ingredients except diced apples and mix until you don’t see any dry flour.
  1. Mix in diced apples.
  1. Spray or grease muffin tin and divide batter into the muffin tins, then bake for about 15 – 20 minutes until golden brown and a toothpick comes out clean when poked into the center of the muffin.
