Breakfast Muffins
These kid-friendly muffins, made with whole wheat flour and fruit, are packed with flavor. Muffins are a great choice for a pre-made, on the run, breakfast.
Ingredients
2 ripe bananas, peeled
½ cup almond butter, peanut butter, or coconut or canola oil
1½ cups whole wheat flour
½ teaspoon cinnamon
1 teaspoons baking powder
½ teaspoon baking soda
3 small or 2 medium apples, diced
baking spray
Instructions
- Preheat oven to 350 degrees F.
- Combine first two ingredients in a bowl and mash with a fork until combined.
- Add the remaining ingredients except diced apples and mix until you don’t see any dry flour.
- Mix in diced apples.
- Spray or grease muffin tin and divide batter into the muffin tins, then bake for about 15 – 20 minutes until golden brown and a toothpick comes out clean when poked into the center of the muffin.
