Buckwheat Salad with Lime Dressing


Yield: 4 servings

Total Time: 20 minutes



1 cup of buckwheat*

1 red or yellow pepper

1 small apple

2 Tablespoons cilantro

1 clove garlic

½ teaspoon salt

2 Tablespoons fresh lime juice

½ teaspoon ground cumin

2 Tablespoons olive oil


Optional ingredient:

¼ cup sliced almonds


Preparation Instructions

  1. Cook buckwheat according to package instructions.
  2. Chop pepper and apple into bite-sized pieces. Chop cilantro.
  3. Chop garlic into very small pieces and place in a small bowl. Add salt, lime juice, cumin and olive oil and whisk to combine into a dressing.
  4. In a large bowl combine buckwheat, pepper, apple and cilantro. Pour the dressing over the salad and mix well to combine. If desired mix in sliced almonds to the salad. Enjoy warm or at room temperature.
