Chicken and Vegetable Kabobs

  • 1½ lbs. boneless skinless chicken breasts, cut into cubes
  • 1 pint cherry tomatoes
  • 3 peppers, cut into large pieces
  • 1 onion, cut into large pieces
  • 1 red onion cut into large pieces
  • ¼ cup olive oil
  • 1 Tablespoon cumin
  • 1 Tablespoon coriander
  • 2 teaspoons paprika
  • 1 teaspoon turmeric
  • ½ teaspoon garlic powder
  • ¼ teaspoon cinnamon
  • ½ teaspoon black pepper
  • 1 teaspoon salt

bamboo or metal skewers (if using bamboo, soak in water before using)

Instructions

  1. Combine olive oil and spices in a large bowl.
  2. Add chicken and vegetables to bowl, mix to coat, and let marinade for 15-20 minutes.
  3. Thread vegetables and chicken onto skewers, leaving some space between each piece.
  4. Grill or roast skewers in a hot oven until chicken is cooked through and vegetables are tender and beginning to brown, about 20 minutes.
