Chilled Zucchini Basil Soup

  • 1 cup water
  • 
1 zucchini, ends removed and chopped
  • 1 stalk celery, chopped
  • 1 Tablespoon lemon or lime juice
  • 
1 clove garlic, peeled
  • 1/4 teaspoon salt
  • 
1/4 teaspoon pepper
  • 
1 Tablespoon olive oil
  • 
1/2 avocado, peeled, pit removed
  • 4 basil leaves

Combine all ingredients in a blender. Blend until smooth, thin with water to reach desired consistency. Refrigerate until cold. Adjust seasoning and enjoy.
