Garlic Knots

serves 8




1½ cups warm water

1 package active dry yeast

1 teaspoon sugar

2 cups whole wheat flour

2¼ cups all purpose flour

1 teaspoon salt

2 Tablespoons olive oil


½ stick butter, unsalted

2 Tablespoons olive oil

3 Tablespoons minced garlic

½ cup chopped parsley

½ cup grated Parmesan cheese

1 teaspoon salt



  1. Combine yeast, sugar and warm water in a large bowl; stir to dissolve. Let stand 5-10 minutes until foam appears.
  2. Mix in oil, then flours, then salt. Knead dough in bowl or on lightly floured board until elastic.
  3. Shape dough into a ball and store in oiled bowl, covered, in warm damp place for at least 30 minutes.
  4. Meanwhile, combine butter, oil and garlic in a small pot and cook over low heat until garlic is fragrant. Remove from heat.
  5. Divide dough into 24 equal parts and roll each into a long strand. Tie each strand into a knot. Brush with olive oil and bake at 375F for 10-15 minutes until brown and crispy.
  6. Toss garlic knots with butter mixture and sprinkle with parsley and grated cheese, to serve.
