Israeli Cabbage Salad

  • 1⁄2 head red cabbage, cored and sliced thin
  • 3 carrots, scrubbed and grated
  • 1 cucumber, cut into matchsticks
  • ¼ cup chopped dill, parsley or a combination
  • 1 Tablespoon lemon juice
  • 1 Tablespoon apple cider vinegar
  • 4 Tablespoons olive oil
  • 1 teaspoon garlic powder
  • salt and pepper to taste

Instructions

  1. Combine all ingredients in a large bowl. Mix well.
  2. Season with salt and pepper to taste.
  3. Let sit for 10-15 minutes until cabbage begins to wilt.
  4. Enjoy!
