Marinara Sauce

serves 8



½ teaspoon garlic powder

1 teaspoon onion powder

1 zucchini, grated

2 carrots, grated

2 stalks celery, chopped

1 large can crushed tomatoes

1 teaspoon parsley flakes

1 teaspoon dried oregano

1 teaspoon dried basil



  1. Heat just enough canola or olive oil to cover the bottom of a large pot.
  2. Add garlic powder, onion powder, zucchini, carrot and celery and cook 3-4 minutes more until all vegetables are tender.
  3. Add remaining ingredients.
  4. Bring to a boil, then lower heat and simmer 10-15 minutes until sauce is slightly thickened, stirring occasionally.
