Microwave Irish Soda Bread Rolls

1 cups all purpose flour or bread flour

1 cups whole wheat flour

¾ teaspoon baking powder

¾ teaspoon baking soda

¼ teaspoon salt

½ cup raisins or dried currants (optional)

½ Tablespoon caraway seeds (optional)

1 cup buttermilk


  1. In a large bowl, combine dry ingredients (flour, baking powder, salt and baking soda).
  2. Add buttermilk and stir until a sticky dough forms. Mix in raisins and caraway seeds (if using) just to combine.
  3. Divide the dough into twelve even pieces and form each piece into a ball.
  4. Place the rolls in a lightly greased muffin tray (silicone) and bake on high for 5 minutes. Check rolls for doneness by inserting a toothpick into the middle of each loaf. Toothpick should come out clean. Continue to bake if still raw in the middle in 1 minute intervals until a toothpick comes out clean.
