Big Green Salad with Red Wine Vinaigrette

This salad is as simple and delicious as it is versatile. Eating fresh greens is a great way to add some veggies and crunch to your life. The light dressing enhances the taste without masking flavor, and the cancer-fighting properties of these greens add extra goodness to your bowl.

INGREDIENTS
1 head of romaine lettuce, washed and torn into bite-sized pieces
1 cucumber, cut in half and sliced
leaves from 1 bunch of parsley
2 green onions, sliced thin
6 ribs of celery, sliced on a diagonal
½ red onion, sliced thin
1 carrot, grated
1 tomato, diced or a few cherry tomatoes
¼ cup red wine vinegar (or other vinegar)
1 tsp mustard
1-2 cloves of garlic, minced
¼ – ½ C olive oil, to taste
INSTRUCTIONS
- In a large bowl, combine the first 8 ingredients.
- Combine the remaining ingredients in a container with tight-fitting lid. Secure lid and shake vigorously to combine. Season with salt and pepper to taste.
- Toss salad with dressing to coat and enjoy!
