Cabbage Ginger Slaw

makes 5 ½ cup servings

2 carrots, scrubbed and grated

½ head green cabbage, sliced thin

½ head red cabbage, sliced thin

½ head kale, sliced in thin ribbons

1 small red onion or 3 scallions, sliced thin

1 1-inch piece of ginger, peeled and minced or grated

2 cloves garlic, minced or grated

2 T rice vinegar (or apple cider vinegar)

2 T canola oil

1 T toasted sesame oil (optional)

½ tsp salt

¼ tsp black pepper

¼ cup cilantro leaves

¼ cup parsley leaves

2 T toasted or raw sesame seeds (optional)



Combine all ingredients in a large bowl. Mix to coat evenly. Taste and adjust seasonings.
