Cornbread Muffins

Ingredients

 2/3 cup all purpose flour

2/3 cup whole wheat flour

1 cup corn meal

2 teaspoons baking powder

1 teaspoon salt

2 large eggs, lightly beaten

1 cup nonfat plain greek yogurt

¼ cup canola oil

1½ Tablespoons honey

½ cup water

1 15.5 oz. can corn (no salt added), drained

baking spray

 

Instructions

1. Preheat oven to 375 degrees F.

2. Combine all ingredients, except water, in one bowl. Mix until just combined.

5.  Spray or grease muffin tine, or line with tin liners and pour batter into the muffin tin, then bake for about 15 – 20 minutes until golden brown and a toothpick comes out clean when poked into the center of the muffin.
