English Muffin Everything Pizzas

Forget frozen, boxed pizzas! Make your own fresh pizza with any and all the topings you want. Using English muffins as crust makes portion control easy, preventing over-eating. The vegetables and cheeses below are a mere suggestion.
Ingredients
4 whole wheat English muffins
Toppings
(use any vegetables you like or the suggestions below)
1 crown of broccoli, cut into small florets
1 pepper, any color, sliced or diced
a handful of mushrooms, sliced or chopped
1 package turkey pepperoni (optional)
4 oz. Mozzarella cheese, grated
2 oz. Parmesan cheese, grated
Sauce
½ (8 oz.) can tomato sauce
¼ tsp garlic powder
1 tsp oregano and/or dried basil
1/8 tsp crushed dried hot red pepper flakes
Instructions
- Separate each English muffin for the base of each pizza.
- Roast vegetables with small amount of olive oil, salt, and pepper until brown and tender. (This step is optional; You can also use cooked leftover veggies.)
- Mix together all sauce ingredients in a small bowl.
- Top each English muffin with a small amount of sauce and desired toppings and cheese.
- Bake pizzas at 450°F in oven or toaster oven until cheese is melted and beginning to brown.
