Everything Pizza
serves 8; makes 2 large pizzas or 8 individual
Ingredients
Toppings
(use any vegetables you like or the suggestions below)
1 sweet potato, scrubbed quartered and sliced thin
1 red onion, sliced thin
1 head of broccoli, cut into small florets (stem sliced thin)
1 package turkey pepperoni (optional)
8 oz. Mozzarella cheese, grated
4 oz. Parmesan cheese, grated
Dough
¼ C warm water
1 package active dry yeast
2 C whole wheat flour
2¼ C all purpose flour
1 tsp salt
1tsp sugar
1 ¼ C lukewarm water
2 Tbsp olive oil
Sauce
2 (8 oz.) cans tomato sauce
1 clove garlic, peeled and crushed or minced
1 tsp oregano and/or dried basil
1/8 tsp crushed dried hot red pepper flakes
Instructions
- Combine yeast, sugar and warm water in a large bowl, stir to dissolve.
- Mix in half of flour and salt.
- Add lukewarm water, oil and beat until smooth. Mix in remaining flour and knead on lightly floured board until elastic.
- Shape into a ball and store in oiled bowl, covered, in warm damp place for at least 30 minutes.
- Meanwhile, roast vegetables with small amount of olive oil, salt, and pepper until brown and tender.
- Warm all sauce ingredients together in a covered saucepan over low heat, 5-10 minutes. Keep warm until ready to use.
- Punch down dough and roll or stretch into desired shape(s).
- Top with small amount of sauce and desired toppings.
- Bake pizza at 450°F until cheese is melted and beginning to brown.
