Gazpacho

Ingredients

  • 1½ Tablespoons wine vinegar (or other vinegar)
  • 2 Tablespoons olive oil
  • 2 cloves garlic
  • 1 cucumber, chopped
  • 1 green pepper, chopped
  • 3 ripe tomatoes, chopped
  • 3 scallions or 1 small onion, chopped
  • 1 teaspoon Worcestershire sauce, or dash of Tabasco, optional
  • 1/4 cup water
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1-2 cups tomato juice (preferably low sodium)

 Instructions

  1. Blend vegetables in food processor or chop.
  2. Blend in tomato juice and water to desired consistency.
  3. Garnish with diced cucumber, tomato or scallions, or sprinkle with raw or cooked corn kernels, or herbs such as dill or cilantro.
