Gazpacho
Ingredients
- 1½ Tablespoons wine vinegar (or other vinegar)
- 2 Tablespoons olive oil
- 2 cloves garlic
- 1 cucumber, chopped
- 1 green pepper, chopped
- 3 ripe tomatoes, chopped
- 3 scallions or 1 small onion, chopped
- 1 teaspoon Worcestershire sauce, or dash of Tabasco, optional
- 1/4 cup water
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1-2 cups tomato juice (preferably low sodium)
Instructions
- Blend vegetables in food processor or chop.
- Blend in tomato juice and water to desired consistency.
- Garnish with diced cucumber, tomato or scallions, or sprinkle with raw or cooked corn kernels, or herbs such as dill or cilantro.
