Granola, Fruit, and Yogurt Parfaits

Ingredients
2 cups Greek plain yogurt
3 Tablespoons honey (or sugar)
1/2 teaspoon vanilla
1/2 teaspoon cinnamon
2 cups granola (recipe below)
1 cup fresh berries, hulled and sliced
1 cup any other ripe fruit, such as bananas, peaches, pears, plums, watermelon, pineapple, melon, apples, mango, tangerines, clementine, – peeled, hulled, and sliced
For granola
4 Tablespoons honey
3 Tablespoons canola oil
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
2 cups old-fashioned rolled oats (not instant oatmeal)
4 Tablespoons chopped nuts or seeds (such as almonds, walnuts, pistachios, etc.)
1/2 cup dried fruit (such as raisins, cranberries, dates, prunes, apricots, figs)
non-stick cooking spray
Instructions
1. Pre-heat oven to 350F.
2. In a large bowl, combine oats, honey, nuts, oil and cinnamon and salt; Mix well until oats are moistened.
3. Spread oat mixture evenly onto baking sheet and place in the middle rack of preheated oven.
4. Stir every 5-10 minutes to brown evenly. Watch closely to be sure the mixture does not burn. Bake until lightly browned, about 15-20 minutes.
5. Remove from oven. Let cool completely, about 5 minutes.
6. Transfer cooled granola into a medium bowl. Stir in dried fruit.
7. Combine all fruit in a big bowl; in another bowl, combine yogurt, honey, spices and vanilla.
8. Then layer yogurt, granola and fruit in glasses.
