Irish Soda Bread

2 cups all purpose flour or bread flour

2 cups whole wheat flour

1 Tablespoon baking powder

½ teaspoon salt

¾ teaspoon baking soda

1 cup raisins or dried currants (optional)

1 Tablespoon caraway seeds (optional)

2 cups buttermilk  


  1. Preheat oven to 350 degrees F.
  2. In a large bowl, combine dry ingredients (flour, baking powder, salt and baking soda).
  3. Add buttermilk and stir until a sticky dough forms. Mix in raisins and caraway seeds (if using) just to combine.
  4. Turn the dough out onto a floured surface and knead the dough with the palms of hands for 1 minute.
  5. Half the dough and form each piece into a ball. Cut an x into the top of each loaf.
  6. Place the loaves on a lightly greased baking sheet and bake until brown on top and bottom and loaves sound hollow when tapped on the bottom. You can also check for doneness by inserting a toothpick into the middle of each loaf. Toothpick should come out clean. Total baking time about 45 minutes. For faster cooking time, divide dough into 8-16 individual rolls instead of large loaves.
