Mango Salsa

Sharp knife

Large bowl



2 large ripe mangoes, peeled and diced

1 small cucumber, diced

1 medium bell pepper, diced

2 green onions, sliced thin

1 medium jalapeño pepper, seeded and minced

1 medium lime, juiced

1⁄4 cup fresh cilantro, basil, or parsley (or a combination)



  1. In a large bowl, combine all ingredients.
  2. Season with salt and pepper to taste.
  3. If salsa is too tart, add a teaspoon of olive oil.


NOTE: for more spice, do not remove seeds from jalapeno pepper.
