Turkey Tacos

1 carrot

1 onion

1 Tablespoon canola oil

1 pound ground turkey

2 Tablespoons chili powder

1 teaspoon salt

1 teaspoon black pepper

1 cup water

12 soft corn tortillas


Optional toppings:

½ head lettuce, shredded

1 cup shredded reduced-fat cheese


Preparation Instructions

  1. Prepare vegetables: grate carrot and chop onion.
  2. Heat oil in a large pan over medium heat. Add onion and carrot and cook until tender, about 5 minutes.
  3. Add turkey and cook until it begins to brown, about 5-10 minutes.
  4. Add chili powder, salt and black pepper, and cook for one minute.
  5. Add water and simmer until turkey is cooked through and the liquid is mostly evaporated.
  6. Fill each tortilla with turkey filling and if desired, top with optional toppings.
