KaBOOM! at Prospect Hill

On September 17, we were thrilled to participate in the building of a new playground at Prospect Hill Terrace in Waltham. The main organizer of the event, KaBOOM, is a non-profit organization that helps communities build playgrounds for children. It was both exciting and energizing to see so many groups of volunteers turn out to make a difference for kids, including members of the NE Patriots and NE Revolution teams.

Healthy Waltham’s efforts included leading groups in the building of/ enhancement of garden spaces at the housing complex.  We also served two salads to the volunteers at lunchtime. Both salads received rave reviews with so many requests for the kale recipe especially that we wanted to post them here. All the kale for the event was donated by the Waltham Fields Community Farm, and the salad greens were donated by Whole Foods.  Enjoy!

Kale Salad with Mandarin Oranges & Honey

  • 1 bunch kale, stalks removed, leaves thinly sliced
  • juice of 1 lemon
  • 2 teaspoons honey
  • 1/4 cup extra virgin olive oil
  • 1/4 teaspoon Kosher/coarse salt
  • Freshly ground black pepper
  • 1 can mandarin oranges in juice, drained (about 1 cup)
  • 2 tablespoons toasted pepitas (pumpkin seeds)

Put thinly sliced kale in a large bowl. Add a little of the lemon juice, oil and salt and massage with hands until kale softens. (Alternately – and this is what we did for KaBOOM – let kale marinate in the dressing in the refrigerator over night to soften and wilt.) Dressing: in a small bowl, whisk the remaining lemon juice with honey and pepper. Whisk in oil until dressing forms. Pour dressing over the kale and add the mandarin oranges. Adjust seasonings and add some of the mandarin juice if a sweeter salad is desired. Sprinkle with the pepitas before serving.
