Microwave Apple Cranberry Crisp

2 large apples, cored and sliced (leave peel on)

2 Tablespoons melted butter

1 Tablespoon brown sugar

½ cup oats (old-fashioned or quick-cooking)

2 Tablespoons whole-wheat flour

2 Tablespoons all-purpose flour

1 teaspoon cinnamon

3 Tablespoons canned cranberry sauce (whole berry, if possible)

2 Tablespoons fresh cranberries (optional)

2 Tablespoons roasted sunflower or pumpkin seeds or nuts


Put apples into a greased microwavable container. Add cranberry sauce and fresh cranberries (if using). In a separate bowl, mix remaining ingredients. Spread oat mixture on top of apple cranberry mixture. Microwave on high for 8-10 minutes until apples are soft. Sprinkle seeds or nuts on top. Let cool a few minutes before serving.
